Slow Cooker Pork & Noodles

Ingredients
2 1/2 lbs bone-in country style pork ribs
1 large onion, diced
2 ribs of celery, diced
2 medium cloves of garlic, minced
2 cups beef broth
1 1/2 TBSP cooking oil
1 lb egg noodles
salt and pepper
Directions
1. Pat ribs dry with paper towels and season liberally with salt and pepper.
2. Heat oil in a dutch oven or large pan over medium-high heat until shimmering. Brown ribs, about 3 minutes per side. Place ribs in the slow cooker.
3. Keep the pan on medium-high heat and add the onions and celery, cook about 2 minutes, stirring occasionally. Stir in the garlic and cook for about 30 seconds or until garlic becomes fragrant. Add the beef broth and scrape the bottom of the pan with a wood spoon to release any stuck on bits.
4. Pour the broth and veggies from the pan over top of the pork in the slow cooker. Cook on low for about 7 hours or until pork is falling off the bone.
5. Discard the bones and shred the pork with forks.
6. Cook noodles according to package directions and serve the pork over top the egg noodles.
