Yummy Chicken Nuggets

Total Time: 20 minutes active time and 3 hours non active time
Ingredients
1 lb ground chicken
For the flour coating:
1 cup all-purpose flour
1/2 cup cornstarch
1 1/2 Tbsp salt
1 tsp sugar
1/4 tsp white pepper
1/4 tsp ground pepper
1/4 tsp onion powder
For the batter:
1/2 cup sparkling water
1 egg
2 Tbsp cornstarch
2 Tbsp all-purpose flour
1/4 tsp onion powder
1/4 tsp black pepper
1/2 tsp salt
1/2 tsp sugar
Oil to deep-fry
Directions
1. On a wax paper lined baking tray, shape ground chicken into nugget shapes. Freeze until solid, about 2 to 2 1/2 hours.
2. Whisk all ingredients for flour coating in a large bowl.
3. For the batter, whisk together listed ingredients until combined. Set aside.
4. Add frozen nuggets to the flour coating and coat. Then dip each nugget in the batter, followed by another dip in the flour coating.
5. Heat oil to 350ºF, and fry for 3-4 minutes.
6. Serve with your favorite dipping sauce.

Notes/Tips
For a crisper breading try substituting the cornstarch for finely ground cornmeal.I pulsed chicken breast in the food processor instead of purchasing ground chicken and they came out great.
