Artichoke, Bacon & Spinach Pizza

Ingredients
- For the dough:
- 1 packet active dry yeast(1/4 oz or 2 1/4 tsp)
- 1 cup warm water
- 1 TBSP honey
- 3 cups all-purpose flour
- 1 TBSP cooking oil plus a little extra
- 1 tsp salt
- For the toppings:
- 14 oz can of artichoke hearts, drained and chopped
- 1/2 lb of homemade bacon, cut into small strips
- 1 cup frozen spinach
- 1 medium garlic clove, minced
- 8 oz mozzarella cheese, shredded
- 1/4 cup fresh grated parmesan cheese
- 1 TBSP olive oil

Directions
- FOR THE DOUGH:
- In a stand mixer or large bowl mix the yeast, honey and water. Let stand 10 minutes or until it begins foaming.
- Add the 1 TBSP oil, salt and flour and mix until well combined and dough pulls away from sides of bowl.
- Use a little oil to lightly cover sides and bottom of a separate large bowl.
- Knead the dough 10 minutes by hand or about 5 minutes using a stand mixer with a dough hook.
- Form the dough in a ball and place in the oiled bowl. Cover and put in a warm place to rise, about 30 minutes.
- Roll out dough to a 16 inch diameter circle and place on a lightly oiled pizza pan.
- FOR THE TOPPINGS AND PIZZA ASSEMBLY:
- Preheat the oven to 450°F.
- Cook the bacon pieces in a large pan until crispy, Set bacon on a paper towel and set aside. Discard all bacon fat except 1/2 tsp from the pan and add the spinach to the pan over medium heat. Cook for 3 minutes, stir in the garlic and cook for 15 more seconds or until fragrant. Turn off the heat and allow spinach to cool. When spinach is cool mix in the cheeses.
- Brush the top of the pizza dough with the olive oil then spread on the spinach & cheese mixture evenly. Top with the chopped artichokes and cooked bacon.
- Bake for 14 to 15 minutes or until crust is golden brown.
