Artichoke, Bacon & Spinach Pizza recipe

Ingredients

  • For the dough:
  • 1 packet active dry yeast(1/4 oz or 2 1/4 tsp)
  • 1 cup warm water
  • 1 TBSP honey
  • 3 cups all-purpose flour
  • 1 TBSP cooking oil plus a little extra
  • 1 tsp salt
  • For the toppings:
  • 14 oz can of artichoke hearts, drained and chopped
  • 1/2 lb of homemade bacon, cut into small strips
  • 1 cup frozen spinach
  • 1 medium garlic clove, minced
  • 8 oz mozzarella cheese, shredded
  • 1/4 cup fresh grated parmesan cheese
  • 1 TBSP olive oil

Directions

  1. FOR THE DOUGH:

  2. In a stand mixer or large bowl mix the yeast, honey and water. Let stand 10 minutes or until it begins foaming.

  3. Add the 1 TBSP oil, salt and flour and mix until well combined and dough pulls away from sides of bowl.

  4. Use a little oil to lightly cover sides and bottom of a separate large bowl.

  5. Knead the dough 10 minutes by hand or about 5 minutes using a stand mixer with a dough hook.

  6. Form the dough in a ball and place in the oiled bowl. Cover and put in a warm place to rise, about 30 minutes.

  7. Roll out dough to a 16 inch diameter circle and place on a lightly oiled pizza pan.

  8. FOR THE TOPPINGS AND PIZZA ASSEMBLY:

  9. Preheat the oven to 450°F.

  10. Cook the bacon pieces in a large pan until crispy, Set bacon on a paper towel and set aside. Discard all bacon fat except 1/2 tsp from the pan and add the spinach to the pan over medium heat. Cook for 3 minutes, stir in the garlic and cook for 15 more seconds or until fragrant. Turn off the heat and allow spinach to cool. When spinach is cool mix in the cheeses.

  11. Brush the top of the pizza dough with the olive oil then spread on the spinach & cheese mixture evenly. Top with the chopped artichokes and cooked bacon.

  12. Bake for 14 to 15 minutes or until crust is golden brown.
