Roasted Tomatillo Guacamole

Ingredients
1 avocado pitted, peeled and diced
4 tomatillos, husked
1 TBSP diced jalapenos
1/3 cup diced yellow onion
1 TBSP lime juice
1/4 cup fresh chopped cilantro
1 clove garlic, minced
1/4 tsp salt
dash pepper
Directions
1. Heat the broiler on your oven and roast the tomatillos in the broiler for about 8 minutes, flip them over and roast 8 more minutes or until the skin is blistered. Allow to cool and the coarsely chop.
2. In a mixing bowl mash the avocado with a fork and then add the remaining ingredients including the roasted tomatillos. Mix until well combined, add extra salt and pepper to taste.
3. Cover and refrigerate until ready to serve.

Notes/Tips
When refrigerating guacamole press saran wrap flat against the guacamole to keep any air from getting to it, this will help preserve freshness.
