Cheesy Cauliflower Mash

Ingredients
8 cups cauliflower florettes, no stems (about 2 small heads)
4 TBSP butter
1/4 cup heavy cream + more if needed
4 ounces sharp white cheddar cheese, shredded
Salt & Pepper
Directions
1. Put the cauliflower, butter and cream into a microwave safe bowl and sprinkle with salt & pepper.
2. Cover with plastic wrap and microwave 3 minutes. Stir, re-cover and microwave 8 minutes more.
3. Check the cauliflower it should mash easily with the back if a spoon. If not cover and cook in 2 minute increments until smashable.
4. Put into the food processor and puree until smooth. Add the cheese and pulse til combined. Taste and add salt and pepper as needed and thin with more cream if needed.
