Honey & Ginger Pulled Pork with Asian Slaw

An Asian inspired pulled pork sandwich and slaw.

Honey & Ginger Pulled Pork with Asian Slaw
For The Pork:
2 lbs country style ribs
1 TBSP cooking oil
1 onion, sliced
2 cloves garlic ,minced
1 TBSP fresh grated ginger
juice from 1 lime
1/4 cup soy sauce
1/4 cup honey
1/2 tsp red pepper flakes
salt & pepper
hamburger buns
For the Slaw:
1/4 head of red cabbage (about 6 oz), thinly sliced
1/2 red onion (about 1 cup), thinly sliced
1/2 carrot (about 1/2 cup), peeled in thin strips
4 tsp sesame oil
4 tsp soy sauce
salt & pepper


For The Pork:

1. In a small bowl mix the garlic, ginger, lime juice, soy sauce, honey and red pepper flakes, set aside.

2. Place the sliced onion in the bottom of a slow cooker.

3. Pat the ribs dry with paper towels and season with salt & pepper. Heat the oil in a butch oven or large pan over medium-high heat until shimmering. Sear the ribs until browned on all sides, about 6 to 7 minutes total.

4. Remove ribs and place on top of the onions in the slow cooker.

5. Discard any left over oil in the dutch oven and then pour the soy sauce mixture into the dutch oven over medium heat scraping the bottom of the pan with a wooden spoon or spatula until any stuck on bits are removed. When liquid begins to boil remove from heat and pour over the ribs.

6. Cover the slow cooker making sure to get a tight seal (if necessary cover the slow cooker with a piece of foil before putting on the lid to help seal it). Cook on low for 6 to 8 hours or until pork is tender enough to shred with a fork.

For the Slaw:

1. Mix all the slaw ingredients together. Add salt & pepper to taste.
