Burger Patties:
1 lb 90/10 ground beef of bison
2 TBSP Olive Oil
2 TBSP cooking oil
8 TBSP Cajun Seasoning
Remoulade sauce:
4 TBSP mayo
2 tsp dijon
1 tsp caper with juice
1/2 tsp lemon juice
1 tsp red onion, minced
2 tsp dill pickle (spicy if you have 'em), minced
4 slices of blue-jack cheese or 8oz blue cheese crumbles
4 leaves crisp red leaf lettuce
4 sliced tomato
sliced or diced red onion


1. Mix the ground bison or beef with the Olive oil

2. Form 4 equally sized patties. Place on a pie plate and cover with plastic wrap. Refrigerate 1-24 hours

3. While burgers are chilling make the remoulade sauce. Put all remoulade ingredients in a bowl and stir together. Store in fridge.

4. Heat a cast iron skillet over high heat and add the cooking oil. Remove the burger patties from the fridge and season with 1 TBSP Cajun seasoning on each side.

5. Once the pan begins to smoke add the burgers (TURN ON YOUR EXHAUST FAN, this gets smokey). Cook until well blackened on one side. Flip and repeat with the other side. Once they are well blackened they will be about medium-rare or medium. If you like them cooked medium well or higher flip a second time and keep on cookin'.

6. Toast the buns if you like and top with remoulade, lettuce, tomato and onion,

7. Turn off the burner and top the burgers with cheese. over so cheese can melt. Place burger on bun and Enjoy.
