Basil Pearl Couscous

Ridiculously easy and delicious tiny pasta balls tossed in a fresh basil sauce.

2.5 cups vegetable broth
1/2 lb middle eastern couscous
5 oz package of fresh basil, stemmed
1/4 tsp kosher salt
pinch fresh ground black pepper
1 TBSP olive oil


1. Bring the veggie broth to a boil and add the couscous. Reduce heat to simmer and cook 8 minutes. Drain reserving the liquid.

2. In a blender cup put the basil, salt, pepper and reserved cooking liquid. Blend until completely smooth.

3. Toss the couscous with the sauce. Drizzle with olive oil. Taste and adjust s & p to your liking.

Notes & Tips

If you have leftovers this also great as a cold salad. Drizzle with a touch of red wine vinegar or top with diced tomatoes and lunch is ready.
