Quick Parmesan Polenta

Creamy polenta made with milk, butter, and Parmesan cheese.

Ingredients

1 cup water
3 cups whole milk
1 cup yellow cornmeal
1/4 tsp salt
1/4 tsp fresh ground pepper
4 TBSP unsalted butter
3/4 cup grated Parmesan cheese

Directions

1. In a medium saucepan bring the water, milk, salt, and pepper to a boil over medium-high heat.

2. Reduce heat to low and stir in the cornmeal very slowly to avoid lumps. Cook, stirring often, until thickened, about 4 minutes.

3. Take off the heat and stir in the butter and Parmesan until well combined.
