1 pound ground beef
1 medium yellow onion diced
1/2 cup water
1/4 cup sriracha sauce
1/2 tsp garlic powder
1 tsp ground cumin
salt & pepper
12 taco shells or tortillas
4 ounces sharp cheddar cheese, shredded
optional toppings: shredded lettuce, diced tomatoes, sour cream

1. Cook the ground beef and onion in a large saute pan over medium-high heat breaking up the beef as it cooks until beef is well browned and onions are softened, about 10 minutes.

2. Drain the beef in a colander to remove any excess grease then return the beef to the pan.

3. Stir the water, sriracha, garlic, cumin, and 1/2 tsp salt in with the beef over medium-high heat and bring to a boil.

4. Reduce heat to medium-low and simmer, stirring occasionally, until most the liquid has evaporated, about 10 more minutes. Taste beef and season with additional salt & pepper if necessary.

5. Warm up your shells/tortillas. Serve the beef in the shells/tortillas topped with cheese, lettuce, tomatoes, sour cream, etc.
