Sicilian Style Sauteed Mushroom & Onion Pizza

Ingredients

For The Crust:
1 1/3 cups warm water
1/4 oz active yeast
1 tsp sugar
4 cups all purpose flour
2 TBSP olive oil
1 tsp salt
For The Rest of The Pizza:
1 cup tomato puree
1/2 tsp salt
1 tsp dry oregano
1/2 tsp dry basil
1 TBSP olive oil
1 onion sliced thin
12 oz mushrooms sliced thin
salt & pepper
8 oz mozzarella cheese, sliced
1/2 cup freshly grated parmesan cheese

Directions

For The Crust:

1. Mix the yeast and sugar with the warm water, let sit for 10 minutes or until foamy. Coat the inside of a large bowl with 1 TBSP of the olive oil.

2. Mix the flour, 1 TBSP olive oil and the salt in with the yeast mixture. Mix for about 5 minutes in a stand mixer with a dough hook or 10 minutes kneading by hand, until stretchy and just slightly sticky. Form dough into a ball, place the dough ball into the oiled bowl and cover, refrigerate for at least 4 hours.

3. Lightly oil an 11x17 inch rimmed baking sheet and place the dough on the baking sheet stretching to fit the entire bottom of the baking sheet. Cover the dough with plastic wrap and place another baking sheet on top. Let rest in a warm area for 2 more hours.

Assemble The Pizza:

1. In a medium size bowl mix together the tomato puree, salt, oregano and basil. Set aside. Preheat oven to 450°F.

2. In a large pan heat the TBSP of olive oil over medium-high heat. Add the mushrooms and onions and lightly season with salt and pepper, saute for 10 minutes or until any liquid has evaporated, take off the heat and set aside.

3. When the dough has rested completely remove the top baking sheet and plastic wrap. Top the dough with the slices of mozzarella cheese then spread on the tomato sauce, top the sauce with the mushroom and onion mixture and finally sprinkle on the grated parmesan.

4. Bake in the preheated oven for 20 to 25 minutes or until the outside of the crust is golden brown. Cut into squares and enjoy.
