Guasacaca - Venezuelan Avocado Salsa

Total Time: 10 minutes plus 1 hour chill time
Ingredients
1 ripe avocado, peeled seeded and chopped
1/2 onion, chopped
1 green bell pepper, chopped
1/2 TBSP diced jalapeno
1 clove garlic
2 TBSP red wine vinegar
1/2 tsp salt
1/4 tsp pepper
1/4 cup fresh cilantro or 1/2 tsp dry cilantro
1/4 cup fresh parsley or 1/2 tsp dry parsley
1/2 cup olive oil
Directions
1. Add all the ingredients except for the oil in a food processor and blend until smooth. While the food processor is still on slowly pour in the olive oil until well combined.
2. Refrigerate at least 1 hour to allow flavors to meld. Add salt and pepper to taste.
3. Goes great with tortilla chips and tacos or use as a sauce for chicken, beef, etc.
