Herb Grilled Chicken

Total Time: 2 hours inactive and 45 minutes active time
Ingredients
Chicken:
4 chicken thighs, bone in
Brine:
4 cups water
2 TBSP salt
1 TBSP liquid smoke
1 TBSP soy sauce
Spice mix:
1 tsp granulate garlic
1/2 tsp basil
1/4 tsp thyme
1/4 tsp rosemary, fresh ground
1/4 tsp kosher salt
1/2 tsp oregano
1/3 tsp parsley
1/4 tsp granulated onion
dash black pepper
pinch dry mustard
2 TBSP oil
Directions
1. Mix all the ingredients for the brine and add the chicken. refrigerate 2 hours.
2. Combine all the dry spices in a large bowl and set aside.
3. Drain the chicken and pat dry.
4. Toss the chicken with the oil.
5. Coat with the dry spices. Allow to sit while you heat the indoor grill.
6. Plug in the grill and turn to the highest setting. Once hot carefully add the chicken skin side down.
7. Cook for about 5-8 minutes then turn over. Cook until the internal temperature reaches 165 degrees.
