Zucchini Feta Fritters with Mint Yogurt Sauce
An easy, gluten-free, low carb DELICIOUS vegetarian appetizer.

Ingredients
- Fritters:
- 2 medium zucchini
- 1 egg, beaten until foamy
- 3/4 cup feta cheese crumbles
- 1/4 tsp kosher salt
- pinch white pepper
- 1/4 tsp granulated garlic
- Yogurt Sauce:
- 1 cup plain yogurt
- 2 tsp mint, julienne cut
- pinch salt
- pinch white pepper
- pinch granulated garlic
- 1/8 tsp honey
- olive oil spray

Directions
- Cut the zucchini using the smallest blade on the mandolin or box grater. Do not use the seeds.
- Add the egg, feta, salt, pepper, and garlic and stir together.
- Heat a griddle to 400 degrees or HIGH. Spray with olive oil spray.
- Form 12- 2 inch patties with the mixture.
- Place on griddle and cook until golden brown, then flip and cook on the other side. About 5 minutes per side.
- In the meantime, mix all the sauce ingredients together in a small bowl.
- Serve the fritters with the sauce.
