Homemade Smoky & Spicy BBQ Sauce

Ingredients
24 ounces (1 1/2 pounds) roma tomatoes, chopped
1/4 cup apple cider vinegar
1 TBSP raw honey
2 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cayenne pepper
salt & pepper
Directions
1. Add the chopped tomatoes to a dutch oven or large saucepan over medium-high heat. Cook the tomatoes, while breaking them up with a spatula, until the liquid from the tomatoes begins to boil.
2. Reduce the heat to medium-low. Simmer the tomatoes over medium-low heat, while continuing to break them up, for about 10 minutes.
3. Add the tomatoes, vinegar, honey, paprika, garlic, onion, cayenne, and 1 tsp salt to a blender or food processor and blend until smooth.
4. Taste the sauce and season with additional salt & pepper if necessary.
5. Cool to room temperature then store in a tightly sealed jar in the refrigerator.
