Cottage Cheese and Spinach Pizza

For the Dough:
1 packet active dry yeast(1/4 oz or 2 1/4 tsp)
1 cup warm water
1 TBSP honey
3 cups all-purpose flour
1 TBSP cooking oil plus a little extra
1 tsp salt
For the Toppings:
1 TBSP olive oil
6 oz frozen spinach
2 cloves minced garlic
1/4 tsp salt
1/4 tsp pepper
16 oz cottage cheese
1/4 cup fresh grated parmesan cheese
1/2 tsp basil
1/4 tsp red pepper flakes
1 cup shredded mozzarella cheese


For the Dough:

1. In a stand mixer or large bowl mix the yeast, honey and water. Let stand 10 minutes or until it begins foaming.

2. Add the 1 TBSP oil, salt and flour and mix until well combined and dough pulls away from sides of bowl.

3. Use a little oil to lightly cover sides and bottom of a separate large bowl.

4. Knead the dough 10 minutes by hand or about 5 minutes using a stand mixer with a dough hook.

5. Form the dough in a ball and turn in the oiled bowl to coat. Cover and put in a warm place to rise for about 30 minutes.

For the Toppings:

1. Heat the oil in a large pan over medium-high heat. Cook the spinach until heated through, about 3 minutes, add the garlic and cook 30 more seconds or until garlic is fragrant. Take of the heat and allow to cool about 10 minutes.

2. In a large mixing bowl combine the spinach, cottage cheese, parmesan cheese, basil, red pepper flakes, salt and pepper.

To Assemble:

1. Preheat oven to 450° F. Lightly oil a pizza pan or baking sheet and spread dough to fit the pan. Spread the spinach mixture evenly over the dough then sprinkle the shredded mozzarella on top. Bake in the preheated oven for 14 to 17 minutes or until crust is golden brown.
