Cottage Cheese and Spinach Pizza

Ingredients
THE DOUGH:
1 packet active dry yeast(1/4 oz or 2 1/4 tsp)
1 cup warm water
3 cups all-purpose flour plus a little extra
1/2 tsp salt
1 TBSP plus 1 tsp olive oil
THE TOPPINGS:
1 TBSP olive oil plus a little extra
5 ounces fresh baby spinach leaves
2 garlic cloves, minced
16 ounces cottage cheese
1/2 tsp dried basil
1/4 tsp crushed red pepper flakes
1/4 tsp salt
1/4 tsp pepper
4 ounces mozzarella cheese, shredded
Directions
THE DOUGH:
1. In a large mixing bowl stir together the yeast and warm water. Stir in the flour, salt, and 1 TBSP olive oil until well combined and a dough is formed.
2. Knead the dough by hand for about 5 minutes on a lightly floured surface.
5. Form the dough into a ball and place in a large clean bowl. Drizzle 1 tsp of olive oil over the dough and flip around a few times to coat in the oil. Cover the bowl and put in a warm place to rise for about 1 hour.
THE TOPPINGS AND ASSEMBLY:
1. Heat the oil in a large pan over medium-high heat. Cook the spinach while stirring until wilted, 2 to 3 minutes. Take the pan off the heat and stir the garlic in with the spinach.
2. In a large mixing bowl combine the spinach, cottage cheese, basil, red pepper flakes, salt and pepper.
3. Preheat the oven to 450°F.
4. Lightly oil a large 16-inch pizza pan or 18x13-inch rimmed baking sheet and spread dough to fit the pan. Spread the spinach mixture evenly over the dough then sprinkle the shredded mozzarella evenly on top.
5. Bake in the preheated oven for 14 to 17 minutes or until cheese is browned.
