Cottage Cheese and Spinach Pizza
Cottage cheese, mozzarella cheese, fresh garlic, and fresh baby spinach baked on a homemade pizza crust.

Ingredients
- THE DOUGH:
- 1 packet active dry yeast(1/4 oz or 2 1/4 tsp)
- 1 cup warm water
- 3 cups all-purpose flour plus a little extra
- 1/2 tsp salt
- 1 TBSP plus 1 tsp olive oil
- THE TOPPINGS:
- 1 TBSP olive oil plus a little extra
- 5 ounces fresh baby spinach leaves
- 2 garlic cloves, minced
- 16 ounces cottage cheese
- 1/2 tsp dried basil
- 1/4 tsp crushed red pepper flakes
- 1/4 tsp salt
- 1/4 tsp pepper
- 4 ounces mozzarella cheese, shredded

Directions
- THE DOUGH:
- In a large mixing bowl stir together the yeast and warm water. Stir in the flour, salt, and 1 TBSP olive oil until well combined and a dough is formed.
- Knead the dough by hand for about 5 minutes on a lightly floured surface.
- Form the dough into a ball and place in a large clean bowl. Drizzle 1 tsp of olive oil over the dough and flip around a few times to coat in the oil. Cover the bowl and put in a warm place to rise for about 1 hour.
- THE TOPPINGS AND ASSEMBLY:
- Heat the oil in a large pan over medium-high heat. Cook the spinach while stirring until wilted, 2 to 3 minutes. Take the pan off the heat and stir the garlic in with the spinach.
- In a large mixing bowl combine the spinach, cottage cheese, basil, red pepper flakes, salt and pepper.
- Preheat the oven to 450°F.
- Lightly oil a large 16-inch pizza pan or 18x13-inch rimmed baking sheet and spread dough to fit the pan. Spread the spinach mixture evenly over the dough then sprinkle the shredded mozzarella evenly on top.
- Bake in the preheated oven for 14 to 17 minutes or until cheese is browned.
