8 cabbage leaves
1/2 cup fresh grated parmesan cheese
For the filling:
1/2 lb ground beef
1/2 lb ground pork
2 cloves minced garlic
2 tsp dry parsley
1 cup cubed Italian bread
1 egg lightly beaten
1 TBSP red wine vinegar
1/2 tsp salt
1/4 tsp pepper
For the sauce:
1 tsp olive oil
1/2 cup diced onion
2 cloves minced garlic
15 oz can crushed tomatoes
2 TBSP tomato paste
1 TBSP oregano
1/2 tsp basil
1/2 tsp salt
1/4 tsp pepper


1. In a large bowl mix all the filling ingredients with your hands until well combined. Cover and refrigerate.

2. Bring a large pot of water to a boil and cook the cabbage leaves until tender, about 4 to 5 minutes. Drain cabbage, rinse and place on paper towels to dry.

3. In a medium saucepan heat the oil over medium heat, add the onions and cook until they begin to brown, about 3 minutes. Stir in the garlic and cook 30 seconds or until fragrant. Stir in the remaining sauce ingredients, cover pot and reduce heat to low. Cook sauce for 30 minutes, stirring occasionally.

4. Preheat oven to 375°F. Divide the filling evenly among the cabbage leaves (about 2.5 ounces of beef per leaf). Place beef in the center of the leaf and fold one end over then fold in the sides and continue rolling (like a small burrito). Place roll seam side down in a baking dish, continue with remaining leaves until all leaves are rolled.

5. Pour the tomato sauce over top of the rolls, cover with aluminum foil and bake in the preheated oven for 1 1/2 hours. Remove foil sprinkle on the parmesan cheese and bake uncovered 10 more minutes.
