Ratatouille Tian

Ingredients
4 TBSP Tomato Paste
1/4 cup water
1/2 tsp granulated garlic
dash salt
2 yellow tomatoes, sliced
2 red tomatoes, sliced
1 purple tomato, sliced
1 zucchini, sliced
1 yellow squash, sliced
1 orange pepper, cut into like size pieces
1 purple pepper, cut into like sized pieces
Olive oil spray
1 TBSP Herbs de Provence
salt & pepper
Directions
1. Mix the tomato paste, water, garlic, and salt and spread over the bottom of a tart pan or large pie plate.
2. Lay all the vegetables out on cutting boards or baking sheets. Spray with olive oil spray.
3. Sprinkle with Herbs de Provence, salt & pepper. Preheat the oven to 400 degrees F.
4. Place the vegetables into the tart pan by artfully shingling them alternating colors, begin on the outside and coil around to the middle.
5. Cover with foil and bake for 1 hour.
6. Enjoy.

Notes/Tips
Herbes de Provence is a mixture of dried herbs usually containing savory, marjoram, rosemary, thyme, and oregano.Use the vegetables you like and can find fresh in your area. Traditional ratatouille includes eggplant. I don't like it so I did not add it, but if you like add it!
