Greek Pasta Salad
Servings: 6
Ingredients
1/2 lb farfalle pasta
1 1/2 cups sliced kalamata olives
1/2 large red onion thinly sliced
1 large cucumber peeled and thinly sliced
1 1/2 cups sliced pepperoncinis
1 1/2 cups sliced cherry tomatoes
4 ounces crumbled feta cheese
Greek Dressing:
2 TBSP red wine vinegar
1/4 cup olive oil
1/2 tsp dijon mustard
1/2 tsp oregano
1/4 tsp kosher salt
1/4 tsp fresh ground pepper
1/4 tsp garlic powder
Directions
1. Cook pasta according to directions. Rinse pasta in cold water and place in a large bowl.
2. In a small bowl mix the dressing ingredients together and set aside.
3. Add olives, onion, cucumber, tomatoes, pepperoncinis and Greek dressing. Toss to coat.
4. Add feta cheese and toss once more.
5. Chill in refrigerator for at least 3 hours before serving.
