Zucchini and Yellow Squash Summer Salad

Total Time: 15 minutes to make 4 hours to marinate
Ingredients
2 zucchinis
1 yellow squash
2 cloves of garlic, minced
1 TBSP olive oil
2 TBSP lemon juice
1 tsp fresh thyme or 1/4 tsp dried thyme
salt and pepper
Directions
1. Cut the ends off the zucchinis and squash and peel thin strips using a vegetable peeler.
2. Place strips in a large bowl and add the lemon juice, garlic, olive oil and salt. Toss to combine, cover and refrigerate at least 4 hours (up to 8 hours).
3. Add the thyme and salt and pepper to taste. Toss and serve.
