Zucchini and Yellow Squash Summer Salad
Squash and zucchini marinated in lemon, garlic and oil make this a simple & refreshing summer salad

- 2 zucchinis
- 1 yellow squash
- 2 cloves of garlic, minced
- 1 TBSP olive oil
- 2 TBSP lemon juice
- 1 tsp fresh thyme or 1/4 tsp dried thyme
- salt and pepper

Directions
- Cut the ends off the zucchinis and squash and peel thin strips using a vegetable peeler.
- Place strips in a large bowl and add the lemon juice, garlic, olive oil and salt. Toss to combine, cover and refrigerate at least 4 hours (up to 8 hours).
- Add the thyme and salt and pepper to taste. Toss and serve.
