Asian Zoodle Bowl

Ingredients
Step 1:
4 cups water
3 cloves garlic, chopped
3/4 cup celery, fine julienne
3/4 cup carrot, fine julienne
1/2 cup yellow onion, fine julienne
2 TBSP whites of the green onion. thinly sliced
1/2 cup soy sauce
Step 2:
1/2 cup sherry
2 TBSP rice vinegar
2 TBSP honey
1/4 tsp red pepper flakes
1 1/2 cup green cabbage, finely shredded
3/4 cup red pepper, fine julienne
Step 3.
3 large zucchini,spiralized or cut julienne bu hand or on a mandolin
2 tsp toasted sesame oil
Garnish:
sprigs of cilantro
green part of the green onion, sliced
lime wedges
Directions
1. In a large pot combine the Step 1 ingredients. Bring to a boil and then reduce to a simmer for 5 minutes.
2. Add the Step 2 ingredients and bring back to a boil for 2-3 minutes.
3. Add the zucchini and boil for 3 minutes more.
4. Drizzle with the sesame oil.
5. Ladle into bowls and garnish with a cilantro, green onions and a squeeze of lime.

Notes/Tips
Add 1 TBSP minced ginger in step 1. I didn't have any or it would be in this recipe.
