Quick Mushroom Barley Pilaf

Ingredients
6 oz crimini mushrooms
2 tsp olive oil
2 TBSP white wine
pinch thyme
s & p to taste
1 cup Quaker instant barley
2 cup vegetable broth
1 cup water
1/4 heavy cream
Directions
1. In a 12 inch skillet heat the olive oil over high heat and saute the mushrooms
2. Add the white wine and cook until the wine has evaporated.
3. Add the thyme, salt, pepper, barley, vegetable broth and water and bring to boil. Boil for 5 minutes.
4. Cover and turn off the heat. Let sit 10 minutes.
5. Add the cream and stir. Serve

Notes/Tips
This recipe would be good with a little added Parmesan cheese or made vegan by omitting the cream.
