Vegetarian Caesar Salad

Ingredients
1/2 cup olive oil
2 cloves garlic, minced
1/2 baguette cut into 3/4 inch cubes
1 tsp soy sauce
1 tsp crushed capers
2 TBSP lemon juice
1/2 cup freshly shredded Parmesan cheese
1/4 tsp fresh ground pepper
2 large romaine hearts, chopped
Directions
1. Mix the oil and garlic together in a small bowl, let sit for 15 minutes.
2. Preheat oven to 400°F. Pour 2 TBSP of the garlic oil and a little salt and pepper into a large bowl and toss with the bread cubes. Bake bread on a baking sheet in the preheated oven for about 10 minutes, flipping halfway through.
3. In a large bowl mix the soy sauce, capers, lemon juice, half of the Parmesan cheese, and pepper. Slowly pour in the remaining garlic oil while whisking until emulsified.
4. Add the romaine, croutons and remaining Parmesan cheese to the bowl and toss to combine.
