Parmesan Pumpkin Penne

Ingredients
8 ounces penne pasta
1 TBSP unsalted butter
1 TBSP olive oil
1/2 yellow onion, diced
3 cloves of garlic, minced
15 ounce can of pumpkin puree
1/4 cup white wine
1 cup water
1/8 tsp cayenne pepper
1/2 tsp salt
1/4 tsp black pepper
1 cup fresh grated Parmesan cheese
Directions
1. Begin boiling water for your pasta. Cook pasta according to package directions, drain the pasta but save about 1/2 cup of the pasta water.
2. While waiting for the pasta water to boil begin cooking your sauce. Melt the butter with the oil in a saucepan over medium heat. Add the onions and cook, stirring occasionally, until softened about 4 to 5 minutes.
3. Stir in the garlic and cook 30 seconds or until fragrant. Add the pumpkin puree, wine, water, cayenne, salt and pepper. Reduce heat to low, cover and simmer for 20 minutes, stirring occasionally.
4. Take the sauce off the heat and stir in half of the Parmesan cheese. Stir the cooked pasta in with the sauce. If you like add some of the reserved pasta water until you reach a desired consistency.
5. Serve the pasta topped with the remaining Parmesan.
