- 4 lbs chicken wings
- 2 TBSP baking powder
- 1 tsp salt
- 1 TBSP garlic powder
- 2 tsp onion powder
- 1 TBSP red pepper flakes
- Optional: blue cheese and/or ranch dressing for dipping

Directions
- Pat the wings dry with paper towels. Mix the remaining ingredients in a large bowl, add the wings and toss with your hands to coat. Place wings on wire racks above foil lined baking sheets. Refrigerate uncovered for 8 hours.
- Preheat oven to 250°F. Bake wings for 30 minutes in the preheated oven, rotating the baking sheets halfway through.
- Turn the oven heat up to 425°F and bake for 1 hour more, once again rotating the baking sheets halfway through.
