Italian Sausage Orzo with Marsala Mushrooms

Ingredients
1 TBSP olive oil
1 cup onion, chopped
1/2 lb cremini mushrooms, sliced
1 lb sweet Italian sausage links, cooked and sliced
16 oz orzo pasta
1 medium garlic clove, minced
1/2 cup Marsala wine
4 cups chicken broth
1/3 cup fresh grated Parmesan cheese
1 cup frozen spinach
Directions
1. In a large saucepan heat the oil over medium-high heat, add the onion, mushrooms, and sausage cook until slightly browned. Add the orzo and garlic and cook 1 minute more.
2. Add the Marsala and scrape up any bits stuck to the bottom of the pan.
2. Slowly pour in the chicken broth and bring to a boil, reduce heat to medium-low. Simmer uncovered, stirring occasionally, about 7 to 8 minutes or until the liquid is absorbed.
3. Take off the heat and stir in the frozen spinach and Parmesan cheese. Add salt and pepper to taste.
