Crispy Curry Oven Baked Chicken Wings

Ingredients
4 lbs chicken wings
2 TBSP baking powder
1 1/2 tsp salt
1 TBSP garlic powder
1 tsp onion powder
1 tsp cayenne pepper
1/2 tsp paprika
2 TBSP curry powder
Directions
1. Pat the wings dry with paper towels. Mix the remaining ingredients in a large bowl, add the wings and toss with your hands to coat.
2. Place wings on wire baking racks above two foil lined baking sheets. Refrigerate uncovered for 8 hours, make sure they're uncovered in the fridge so they dry out, which helps them crisp up in the oven.
3. Preheat the oven to 250°F. Bake wings for 30 minutes in the preheated oven, rotating the baking sheets after 15 minutes.
4. Turn the oven heat up to 425°F and bake for 1 more hour, rotating the baking sheets after 30 minutes.
