Avocado Corn Salad

Ingredients
2 ripe avocados peeled, pitted, and chopped
2 cups frozen corn kernels, thawed
1 red bell pepper,seeded and chopped
1 jalapeno, thinly sliced
6 ounces grape tomatoes, halved
1/4 cup thinly sliced red onion
1/4 cup freshly chopped cilantro
2 TBSP olive oil
zest and juice from 1/2 lime
1/4 tsp garlic powder
1/4 tsp ground cumin
1/4 tsp paprika
salt & pepper
Directions
1. Add the avocado, corn, bell pepper, jalapeno, tomatoes, red onion, and cilantro to a large mixing bowl and toss to combine.
2. In a small bowl mix together the olive oil, lime zest, lime juice, garlic, cumin, paprika, 1/4 tsp salt, and 1/8 tsp pepper.
3. Drizzle the dressing over the salad and toss to combine. Taste and season with additional salt & pepper if necessary.
