Slow Cooker Texas Style Chili

Total Time: 7 to 8 hours
Ingredients
1 TBSP cooking oil
2 lbs stew meat
2 large onions, diced
4 bell peppers, diced
6 TBSP diced jalapeno
6 TBSP chopped pepperoncini
4 cloves garlic, minced
1 cup beef broth
2 TBSP Worcestershire sauce
1 TBSP cumin
2 TBSP red pepper flakes
1/4 cup masa harina
salt & pepper
For serving (optional but recommended):
1 bunch green onions, sliced thin
2 cups shredded sharp cheddar cheese
Directions
1. Heat the oil in a dutch oven over medium-high heat. Dry the meat with paper towels then season with salt and pepper . Sear in the hot oil until well browned, about 6 minutes.
2. Stir in the onion, peppers and garlic and cook for 3 more minutes, stirring occasionally.
3. Add the beef broth, Worcestershire sauce, cumin and red pepper flakes, stir and bring to a boil.
4. Pour into a slow cooker, cover and cook on low for 7 to 8 hours or until beef is tender.
5. Stir in the masa harina and add salt and pepper to taste.
6. Serve topped with cheddar and green onions.

Notes/Tips
If you want to stay true to "Texas Chili" use dried hot peppers in addition or in place of any of the peppers, but any variety of peppers in this recipe would work great.
