12 ounces boneless skinless chicken breast
1/4 cup red pepper flakes
1 TBSP canola oil
1/2 lb penne pasta
1 cup diced tomatoes
1/4 cup shredded parmesan
1 cup pesto sauce


1. Cook penne in boiling water as directed and reserve 1/2 cup of the water.

2. While penne cooks, pat chicken dry and season with salt, pepper and red pepper flakes.

3. Heat oil in a saute pan over medium high heat and add chicken. Saute until cooked through[160 degrees F), about 6 minutes each side.

4. Thinly slice chicken breasts and toss with penne, tomatoes and pesto. Add the reserved pasta water if necessary to loosen pasta.

5. Top with parmesan and serve.
