Bacon and Cheddar Pretzel Crust Pizza

Ingredients
The Dough:
1 1/3 cups warm water
1 packet active dry yeast (2 1/4 tsp)
1 TBSP honey
1 TBSP cooking oil plus a little extra
4 cups all-purpose flour
1 tsp salt
The Toppings:
12 ounces cheddar cheese, finely shredded
4 slices bacon, diced and cooked
1/2 cup hot water
1 TBSP baking soda
4 TBSP unsalted butter, melted
1 clove garlic, minced
kosher salt
Directions
The Dough:
1. In a stand mixer or large bowl mix the yeast, honey and water. Let stand 10 minutes or until it begins to foam.
2. Add the 1 TBSP oil, flour, and salt and mix until well combined and dough pulls away from sides of bowl.
3. Knead the dough 10 minutes by hand or about 5 minutes using a stand mixer with a dough hook.
4. Pour a little oil into a separate large bowl. Form the dough in a ball and flip around in the oiled bowl to cover the dough ball.
5. Loosely cover and put in a warm place to rise for 1 hour.
The Pizza and Toppings:
1. Preheat the oven to 450° F. Lightly oil a large pizza pan or baking sheet.
2. Stretch out the dough to fit your pan and press the dough towards the outside edges to form a thick crust.
3. Mix the hot water and baking soda together in a bowl then, using a pastry brush, thoroughly brush all over the entire top side of the dough, including the crust edges. Let rest 2 minutes then brush again, let rest 2 more minutes then brush one more time (you probably won't use all of the water and baking soda mixture, but you should use most).
4. In another bowl combine the melted butter and garlic and brush that all over the top side of the dough including the crust edges.
5. Sprinkle the cheese and bacon on top (not on the crust edges), then sprinkle a little kosher salt all around on the crust edges.
6. Bake in the preheated oven for 15 minutes or until crust is golden brown.
