Crock-Pot Vegetarian Split Pea Soup
Servings: 4 to 6
Total Time: 7 to 8 hours
Ingredients
1 pound split peas, rinsed
1 large yellow onion, diced small
2 ribs celery, diced small
1 carrot, peeled and diced small
8 ounces red potatoes, scrubbed and cut into 1/2 inch pieces
2 cloves of garlic, minced
6 cups vegetable broth
1 cup water
3 TBSP soy sauce
3 bay leaves
dash of salt & pepper
Directions
1. Spread the split peas on the bottom of a slow cooker and add the remaining ingredients.
2. Cover and cook on low for 7 to 8 hours or until split peas are tender and have almost completely broken down.
3. Stir, add salt and pepper to taste and serve.
