1 TBSP unsalted butter
1 cup cottage cheese
2 cups heavy cream
1/4 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
1 pound sharp white cheddar cheese, shredded
1/2 pound uncooked elbow pasta


1. Preheat oven to 375°F. Spread the butter over the bottom and sides of a 2 quart baking dish.

2. Add the cottage cheese. heavy cream, paprika, salt, and pepper to a blender and puree until smooth. Pour into a large mixing bowl.

3. Add all but 1 cup of the grated cheddar cheese to the mixing bowl along with the uncooked pasta, stir to combine. Pour the mixture into the buttered baking dish and cover with aluminum foil.

4. Place the baking dish on a baking sheet (in case of overflow) and bake in the preheated oven for 30 minutes. Take off the foil and sprinkle the remaining 1 cup shredded cheddar on top, bake uncovered 25 to 30 more minutes or until browned and bubbly.

5. Remove from the oven and let rest 10 minutes before serving.


Don't use a cheap brand cheddar cheese, it won't turn out the same. A good cheese may be a little more expensive but well worth it.
