Parmesan Cauliflower Puree

Ingredients
1 head cauliflower, cut into florets
1/4 cup heavy cream
1/4 cup unsalted butter
1/4 tsp salt
1/4 tsp pepper
1/2 cup freshly grated Parmesan cheese
freshly chopped parsley
Directions
1. Put cauliflower florets, heavy cream, butter, salt and pepper in a microwave safe bowl covered with plastic wrap. Microwave for 6 minutes
2. Pull out bowl (use pot holders, bowl will be hot!) and stir contents. Recover bowl and microwave for an additional 6 minutes.
3. Pull out bowl and pour contents into a food processor. Process until smooth.
4. Add Parmesan cheese and pulse a few more times until cheese is incorporated.
5. Sprinkle the fresh parsley on top and serve.
