Crock-Pot Lasagna
Servings: 6 to 8
Total Time: 4 1/2 hours
Ingredients
1 lb ground Italian sausage
28 ounce can tomato puree
1 tsp dried basil
1 tsp garlic powder
1 TBSP dried oregano
1/2 tsp salt
1/2 tsp black pepper
9 uncooked lasagna noodles
1 lb mozzarella cheese, shredded
24 ounces cottage cheese
1/2 cup Parmesan cheese, freshly grated
1 tsp vegetable oil
1 cup water
Directions
1. Cook the sausage in a large pan over medium heat while breaking it up until well browned, about 6 minutes.
2. Take the pan off the heat and transfer the sausage to a paper towel lined plate and discard any grease from the pan.
3. Return the sausage to the pan along with the tomato puree, basil, garlic, oregano, salt, and pepper. Stir to combine.
4. Lightly oil the inside of a 6-quart crock-pot. Spread a small amount of the sausage tomato sauce on the bottom of the crock-pot, just enough to lightly cover.
5. Take 3 uncooked noodles and lay them in to cover the bottom of the crock pot (you'll have to break them up to fit). Spread 1/3 of the sauce on top of the noodles then 1/3 of the mozzarella on top of the sauce. Spread on half the cottage cheese then repeat noodles then sauce then mozzarella. Spread on the remaining cottage cheese then the remaining noodles then the remaining sauce and then the remaining mozzarella. Sprinkle the Parmesan on top and pour the cup of water in the crock-pot along the sides.
6. Cover the crock-pot and cook on low for 4 to 4 1/2 hours or until noodles are tender.
