1/2 lb russet potatoes peeled and diced
1 tsp white vinegar
1/4 cup onion diced
1/2 pound bulk chorizo sausage
Salt and pepper


1. bring a pot of water to a boil and add potatoes and a dash of salt. Boil potatoes for about 5 minutes.

2. Drain potatoes and reserve 1 TBSP of the pot water.

3. In a large cast-iron pan brown chorizo and onions until cooked through, breaking up the chorizo into small bits, about 8 minutes.

4. Add potatoes and reserved water to the cast-iron pan and combine with onions and chorizo.

5. Cook until potatoes crisp up. Salt and pepper to taste.
