Cuban Style Crispy Pork

Ingredients
3 lb pork shoulder, cut in 1 inch pieces with fat
1 tsp garlic powder
1 TBSP kosher salt
1 tsp ground black pepper
1 tsp ground cumin
1 tsp dried oregano
1 tsp ground coriander
3 TBSP lime juice
3 TBSP orange juice
3 TBSP olive oil
1 1/2 tsp white wine vinegar
Directions
1. Place all ingredients into a gallon zipper bag, seal, and mix around until well coated. Store in fridge for at least 6-8 hours.
2. Heat the oven to 350 degrees F and pour contents of the bag into a glass or ceramic baking dish.
3. Cover with foil and roast for 1 hour.
4. Uncover and continue roasting for 1 more hour.
5. Serve with rice, beans, and/or plantains.

Notes/Tips
If you use a metal baking dish the cooking will take less time.
