Baked Spinach and Goat Cheese Sandwiches

Ingredients
2 TBSP unsalted butter, softened
1/4 tsp garlic powder
4 slices whole grain sandwich bread
1/2 cup finely chopped spinach leaves
2 ounces crumbled goat cheese
3 ounces shredded mozzarella cheese
dash of red pepper flakes
Directions
1. Preheat the oven to 450°F.
2. Mix the softened butter and garlic powder together in a small bowl.
3. In a large bowl mix the spinach, cheeses, and red pepper flakes.
4. Butter one side of each piece of bread with the garlic butter. Lay two pieces of the bread buttered side down onto a baking sheet. Lightly press the spinach and cheese mixture onto the two bread slices then top with the remaining two bread slices buttered side up.
5. Bake in the preheated oven for 7 minutes then flip and bake 5 more minutes or until the bread is browned and crisp on both sides.
