Marinated Italian Vegetable Salad

Ingredients
Dressing:
1 tsp Dijon mustard
1 tsp honey
1 tsp mayonnaise
1/4 tsp granulated garlic
1/4 tsp kosher salt
1/8 tsp black pepper
1/8 tsp red pepper flakes
1 TBSP red wine vinegar
1 TBSP water
2 TBSP olive oil
Vegetables:
2 cup cauliflower, cored and cut in bite size pieces
2 cup green beans, snipped and cut in fourths
1 cup grape tomatoes, sliced in half
1 cup black olives, sliced in half
1 cup orange pepper, chopped
1/4 cup shallot, sliced thinly
1/4 cup Italian parsley, roughly chopped
Directions
1. Whisk together all the ingredients for the dressing.
2. Add the vegetables and toss together.
3. Allow to marinate at least 20 minutes and up to overnight.
4. Remove from fridge and taste. Add more salt and/or a splash of vinegar if needed. Serve
