Ingredients

1/2 TBSP unsalted butter
1/2 pound thick cut uncooked bacon, diced
1 lb russet potatoes, peeled and diced small
1 shallot, chopped
4 green onions, sliced thin
1/2 tsp salt
1/4 tsp black pepper
4 ounces Muenster cheese, sliced or shredded
1/4 cup half-and-half
8 large eggs

Directions

1. Preheat the oven to 350°F. Butter the inside bottom and sides of an 8x8 baking dish.

2. Cook the bacon in a large pan over medium heat until crispy, about 6 minutes. Transfer bacon to a plate lined with a paper towel to drain. Discard all but 1 tsp of the bacon fat from the pan.

3. Add the potatoes, shallot, green onion, salt, and pepper to the pan and cook over medium-high heat for 5 minutes, stirring occasionally.

4. Add the potato mixture and bacon to the buttered baking dish and stir to combine. Place the Muenster cheese evenly on top.

5. Beat the eggs and half-and-half together in a bowl. Pour the eggs over top everything in the baking dish.

6. Bake in the preheated oven uncovered for 40 minutes.
