Vegetable Fajitas with Mojo Verde Sauce

Squash and Zucchini sauteed with peppers, onions and fajita spices. Topped with MOJO- a cilantro based sauce similar to chimichurri.

Mojo Verde Sauce:
1 bunch fresh cilantro leaves
2 TBSP vinegar
1/4 tsp kosher salt
pinch black pepper
1/4 tsp cumin
1 large garlic clove
1 jalapeno, seeded
1/3 cup oil
2-4 TBSP water
Spice Mix:
1/4 tsp garlic powder
1/4 tsp cumin
1/8 tsp cayenne pepper
1/8 tsp dried oregano
1 tsp chili powder
1/2 tsp salt
1/4 tsp pepper
2 tsp cornstarch
Veggie Fajitas:
4 TBSP oil
1 zucchini
1 yellow squash
1/2 orange pepper
1/2 red pepper
1/2 green pepper
1 yellow onion
1/2 cup water
tortillas & additional toppings


1. Make the Mojo: Place cilantro, vinegar, salt, pepper, cumin, garlic and jalapeno in the blender. Pulse to start chopping it all up. Add a bit of oil and puree until smooth, add the water as needed to create a smooth texture, slowly drizzle in the remaining oil with the motor running. Taste and season with salt if needed. Set aside.

2. Make the spice mix: Mix all the spices with the cornstarch in a small bowl

3. Make the veggies: Heat a large skillet over medium heat with 2 TBSP oil when you see whisps of smoke add half of the vegetables and saute, try to get a little browning without over cooking your vegetables. Add half of the spice mix and toss to coat, add half of the water and stir until well coated and water had evaporated.

4. Wipe out your pan and repeat with the remaining vegetables, spice mix and water.

5. Serve with warm tortillas, the Mojo Verde sauce, and your favorite toppings.


Any vinegar, except balsamic, will do just fine. I used rice vinegar, but white, red or apple cider will work just as well. Go with what you've got.
