Vermicelli Carbonara

Ingredients
1/2 lb vermicelli
4 strips bacon diced
2 cloves garlic minced
1/4 cup finely diced onions
1/2 cup parmesan cheese
3 eggs
salt and pepper
Directions
1. Cook the pasta as directed reserving 1/2 cup of the pasta water.
2. While the pasta cooks brown the bacon in a dutch oven over medium heat.
3. When the bacon is cooked stir in the onions and garlic. Cook until the onions and translucent and garlic is fragrant.
4. Add the eggs and scramble in the pan with the onions and bacon.
5. When the eggs are about halfway cooked add the parmesan cheese and stir.
6. Turn off the heat. Add the cooked pasta and toss to combine. Add the reserved pasta water as needed to loosen the pasta.
7. Season with salt and pepper to taste.
