Slow Roasted Crispy Pork Shoulder

Ingredients
8 pound bone-in pork shoulder
2 TBSP olive oil
2 tsp garlic powder
3 TBSP salt
1 TBSP ground black pepper
Directions
1. Preheat oven to 250°F.
2. In a small bowl mix together the oil, garlic powder, salt, and pepper.
3. Rub the pork all over with the seasoning mix.
4. Place the pork skin side up in a dutch oven and cover with a lid. Roast in the pork in the preheated oven for 6 hours.
5. After 6 hours remove the lid from the dutch oven and turn the oven temperature up to 450°F.
6. Roast, uncovered, for 1 more hour, or until the skin is crispy.
7. Take out of the oven and allow to rest for 30 minutes before serving.

Very good but just a little too salty for my tastes. I think I would cut the salt in half and double the garlic powder next time.
