BBQ Rubbed Cast Iron Pork Chops

4 center cut bonless pork chops, about 3/4 inch thick
1 tsp salt
1 TBSP paprika
1 tsp smoke paprika
1 tsp cumin
1 tsp garlic powder
2 tsp coriander
1 tsp siracha powder
1 TBSP sugar
1/4 tsp black pepper
2 TBSP vegetable oil


1. Season chops with the salt. Cover and refrigerate for 1 hour.

2. In a bowl combine the paprikas,cumin,garlic,coriander,siracha,sugar, and pepper.

3. Dry the pork chops with paper towels. Rub spice mixture all over chops.

4. Heat the oil over medium heat in a cast iron skillet until oil begins to smoke.

5. Cook the chops on each side for about 3 to 4 minutes.

6. Chops should be nicely caramelized and register an internal temperature of 135 degrees F.

7. Serve
