12 ounces boneless skinless chicken breast
3 cups shredded cabbage
1 large cucumber, peeled and chopped
4 green onions, sliced thin
1 medium carrot, peeled and grated
1/2 cup fresh cilantro, chopped
1/2 cup chopped peanuts
Chili Lime Dressing
3 TBSP fresh lime juice
3 TBSP canola or vegetable oil
3 TBSP water
2 tsp rice vinegar
2 tsp soy sauce
2 tsp chili garlic sauce


1. Bring a medium pot of water to a boil over medium-high heat. Add the chicken breast to the pot and cover with a lid. Reduce heat to medium-low and simmer until chicken is cooked through, about 15 minutes.

2. Set chicken aside to cool then shred with two forks.

3. Add the dressing ingredients to a jar. Place the lid tightly on the jar and shake vigorously to combine.

4. In a large bowl add the cooked chicken, dressing and remaining ingredients and toss to combine.
