Slow Cooker Pork and Cabbage Stew

A simple slow cooker stew made with pork shoulder, potatoes, onions, and cabbage. Easy and Delicious.

Slow Cooker Pork and Cabbage Stew recipe

Servings: 4 to 6
Total Time: 6 to 7 hours

Ingredients

1 lb russet potatoes, peeled and cut in bite size pieces
1/2 head green cabbage, sliced
2 medium carrots, peeled and sliced in bite size pieces
1 large yellow onion, chopped
2 TBSP cooking oil
2 lbs pork shoulder, cubed
salt & pepper
3 medium garlic cloves, minced
1/2 cup chicken broth

Directions

1. Place to potatoes, cabbage, carrots, and onion in the slow cooker.

2. In a dutch oven or large pan heat the oil over medium-high.

3. Pat the cubed pork dry with paper towels and generously season with salt and pepper.

4. Cook the pork, in batches, in the hot oil until well browned, about 6 minutes per batch. Transfer the pork to the slow cooker on top of the veggies.

6. Take the pan off the heat. While the pan is still hot add the minced garlic and stir until fragrant, about 10 seconds. Pour the chicken broth into the pan, scrape the bottom of the pan with a wooden spoon and spatula to break up any loose bits off the bottom.

7. Pour the broth and garlic from the pan over top of the pork in the slow cooker.

8. Cover the slow cooker and cook on low for 6 hours or until pork and veggies are tender.

9. Stir the stew and if necessary add salt and pepper to taste.
