Alabama BBQ Chicken Burger

Ingredients
1 lb ground chicken
1/2 tsp kosher salt
1/4 tsp garlic powder
1/4 tsp cayenne pepper
2 tsp liquid smoke
6 slices homemade bacon
3 hamburger buns
Alabama BBQ Sauce:
1/2 cup mayonnaise
2 TBSP apple cider vinegar
1/4 tsp salt
1/4 tsp pepper
Directions
1. In a large mixing bowl combine the ground chicken, salt, garlic, cayenne, and liquid smoke using your hands to insure that it's thoroughly mixed.
2. Form 3 patties a little larger in diameter than your hamburger buns. Place the patties on a plate, cover and refrigerate for 1 hour to allow flavors to meld.
3. In another bowl combine the BBQ sauce ingredients. Cover the bowl and refrigerate until ready to use.
4. Cook the bacon in a large skillet or griddle over medium heat until desired crispiness. Set bacon aside and discard all but 1 TBSP of the bacon fat from the pan.
5. Cook the chicken patties in the bacon fat over medium heat until cooked through, about 5 minutes per side.
6. To Assemble: Slather some BBQ sauce on the cut side of the bottom part of the hamburger bun, place the chicken patty on top, lay 2 slices of bacon on the chicken patty, then slather more BBQ sauce on the cut side of the top part of the hamburger bun and lay on top.
