8 ounces bow tie pasta
1/2 cup olive oil
1/4 cup white balsamic vinegar
1/2 tsp kosher salt
1/4 tsp fresh cracked pepper
8 ounces fresh mozzarella, diced
1 cup grape tomatoes, sliced
1/2 cup fresh chopped basil
1 TBSP fresh chopped parsley


1. Cook pasta according to package directions. Drain and rinse under cold water, set aside.

2. Mix together the oil, vinegar, salt, and pepper, set aside.

3. In a large mixing bowl add the pasta, mozzarella, tomatoes, basil, and parsley. Pour about HALF of the dressing over the salad and toss to combine. Add more dressing and/or salt and pepper to taste.

4. Serve immediately, or refrigerate covered for up to 3 days.


If you refrigerate the salad for later save some dressing to toss with it when ready to serve.
